Heat a large drizzle of @Olive Oil{1%tbsp} in a #medium pan{} over medium-high heat. Add @Falafel{20%unit} and cook until golden brown and crispy, ~{2-3%minutes} per side.

Meanwhile, wash and dry produce. Trim and halve @Mini Cucumber{2%unit} lengthwise; slice crosswise into 1/2-inch-thick half-moons. Quarter @Lemon{2%unit}. Toast @Pitas{4%unit}.

Empty contents of @Mediterranean Crunch Salad Kit{2%piece} into a #large bowl{}. Add @Spinach{5%ounce}, cucumber, @Heirloom Grape Tomatoes{8%ounce}, a drizzle of olive oil, and juice from half the lemon. Drizzle with as much dressing as you like; toss to evenly coat. Season with @Salt{1%tsp} and @Black Pepper{1%tsp}.

Divide Mediterranean salad between bowls. Top with falafel and @Dairy-Free Tzatziki Sauce{4%ounce}. Sprinkle salad with @Sumac{2%tsp}. Tear toasted pita into wedges and serve on the side along with remaining lemon wedges.
